To make the Valdespino Pedro Ximenez El Candado wine, before being harvested, the Pedro Ximénez clusters undergo the traditional “asoleo” process where the grapes are exposed to the sun to dry naturally, causing an extraordinary sugar concentration and giving the wine its unique personality.
